  1. Mixing - In this single step process the highest protein flour and all of our premium ingredients are mixed together into one uniform batch. Metropolitan Baking company mixers have two main objectives during the mixing process. These objectives consist of maintaining a thorough and uniform dispersion of the ingredients and a proper development of the gluten.
  2. Scaling - Once the dough is properly developed and fully fermented, the batches are taken to dividers, where they are cut into individual pieces and scaled off to a specific weight. The Dividers will in essence deposit the individual dough pieces onto a conveyor belt where they are carried off to a rounding machine.
  3. Proofing - During this stage the dough pieces undergo what is known as “proofing.” This is done to form more carbon dioxide and render the gluten again extensible. Maintaining the right proofing conditions is a key step to the baking process and one that Metropolitan Baking Company carefully monitors.
  4. Baking - Once the dough pieces enter the oven, heat begins to penetrate the surface and migrates to the interior, thus bringing about a steady rise in loaf temperature. As the temperature of the oven continues to increase, yeast activity proceeds at a rapid level, this activity will give the loaf its final expanded form.
  5. Cooling - As the freshly produced bread products come hot out of the oven, they are sent onto a cooling conveyor. Judging on the size of the product the conveyor is set at different speeds. The Cooling process is in place to cool down the products temperature to a level that is optimum for packaging.
  6. Packaging - Once our products are cooled and meet our quality control standards, they are moved to the wrapping department where they are carefully packaged to ensure our customers are receiving fresh products.
  7. Fulfillment - Once our packaged products are moved to the distribution area, orders are set up for our 60 independent distributors that will in turn deliver Metropolitan Baking Company’s Products to Restaurants, Institutions, and other facilities big and small all over Michigan and the surrounding states.
